The quality of roasted coffee declines very fast therefore choose beans that have just been roasted and buy enough for a fortnight. After that period the quality deteriorates. If you can, buy organic coffee. The farmers carefully nurture their coffee plants to make sure that there is no need to use pesticides and other harmful chemicals. Organic farming increases the cost of production and it is only sustainable if the farmers can sell their produce at high prices. Great coffee roasters will pay a premium for such high-quality coffee to keep the organic farmers in business and to satisfy the people who appreciate it. It is from such roasters who practice fair trade that you should purchase your coffee.
